Spring Mozzarella

Ingredients for 4 people

400 g Mozzarella di Bufala Tenuta Agrilat
8 slices of white bread
100 g egg
200 g flour 0
300 g grated bread
4 basil leaves

Cut the Tenuta Agrilat Mozzarella di Bufala into not very thin slices. Once cut, place it between the sheets of absorbent paper to dry it well so that it is suitable for frying. Shape the loaf into triangles. At each triangle add the mozzarella and a few basil leaves to give an aromatic and fresh touch to the recipe. Place another triangle of bread on top as a “lid”. Press on it to make it adhere well and proceed with the classic breadcrumbs based on flour, egg and breadcrumbs. If you want a crunchy breading, repeat the process twice. Fry with hot oil. Once golden, dry the mozzarella in carrozza on a kitchen paper. Decorate with basil sprouts and some edible flowers to give the dish more chromaticity and color. Then serve.
